These Lunch Lady Brownies are rich, fudgy, chewy, and topped with a smooth cocoa frosting. I love how they bring back that classic school cafeteria-style chocolate dessert flavor in the best way.

Lunch Lady Brownies

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

1 cup melted butter

½ cup unsweetened cocoa powder

2 cups all-purpose flour

2 cups sugar

½ teaspoon salt

4 eggs

3 tablespoons vanilla extract

¼ cup melted butter

¼ cup milk

3 cups powdered sugar

¼ cup unsweetened cocoa powder

1 tablespoon vanilla extract

Directions

I preheat the oven to 350°F and grease a 9x13-inch baking pan.

I whisk melted butter and cocoa powder together in a large bowl until smooth.

I add the flour, sugar, salt, eggs, and vanilla extract, then mix until the batter is thick and fully combined.

I spread the brownie batter evenly into the prepared pan.

I bake the brownies for 25 to 30 minutes, until the center is set and a toothpick comes out with moist crumbs.

While the brownies bake, I make the frosting by whisking melted butter, milk, powdered sugar, cocoa powder, and vanilla extract until smooth.

I spread the frosting over the warm brownies, then let them cool before slicing.

Servings and Timing

This recipe makes 12 servings.

Prep time: 15 minutes

Cooking time: 30 minutes

Total time: 45 minutes

Calories: About 420 kcal per serving

Variations

I like adding chopped walnuts or pecans to the batter when I want extra crunch. I sometimes add a pinch of espresso powder to deepen the chocolate flavor. For a sweeter finish, I sprinkle mini chocolate chips over the warm frosting.

Storage/Reheating

I store these brownies in an airtight container at room temperature for up to 3 days. For longer storage, I keep them in the refrigerator for up to 5 days.

I usually enjoy them at room temperature, but I can warm a brownie in the microwave for a few seconds to soften the frosting and make it extra fudgy.

FAQs

Can I make Lunch Lady Brownies ahead of time?

Yes, I like making them a day ahead because the frosting sets nicely and the brownies stay rich and fudgy.

Should I frost the brownies while they are warm?

Yes, I spread the frosting over warm brownies so it melts slightly into the top.

Can I freeze these brownies?

Yes, I freeze sliced brownies in an airtight container for up to 2 months.

Why are my brownies dry?

I avoid overbaking them. I take them out when the center is set and a toothpick has moist crumbs.

Can I use salted butter?

Yes, I can use salted butter, but I reduce or skip the added salt.

Conclusion

These Lunch Lady Brownies are a classic chocolate dessert I love for their fudgy texture, simple ingredients, and creamy cocoa frosting. They are perfect for sharing, parties, family desserts, or whenever I want a nostalgic homemade treat.
