Crock Pot Birria Tacos

Tender, slow-cooked beef simmered in a rich, smoky tomato broth creates one of my favorite comfort meals. I love how the juicy shredded beef pairs with crispy, cheese-filled tortillas, while the rich birria broth makes every bite even more satisfying. This recipe brings authentic-inspired flavors to my kitchen with the convenience of a slow cooker, making it perfect for family dinners, gatherings, or taco nights.

Crock Pot Birria Tacos

Ingredients

⅛ cup oil, divided

2–3 pounds boneless chuck roast

1 teaspoon salt

1 teaspoon black pepper

16 ounces low-sodium beef broth

14 ounces crushed tomatoes

1 cup finely diced yellow onion

8 ounces canned green chiles

8 garlic cloves

3 tablespoons honey

1 tablespoon ground cumin

1 tablespoon oregano

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon garlic powder

1 cinnamon stick (optional)

15 street-size flour or corn tortillas

4 cups shredded mozzarella or Oaxaca cheese

3 limes, cut into wedges

¼ cup chopped cilantro

Directions

I heat 2 tablespoons of oil in a large skillet over medium-high heat.

I season the chuck roast with salt and pepper on all sides.

I sear the roast for 2–3 minutes per side until it develops a deep golden-brown crust.

I combine the beef broth, crushed tomatoes, onion, green chiles, garlic, honey, cumin, oregano, paprika, onion powder, and garlic powder in a 5–6 quart slow cooker.

I add the cinnamon stick, if using, and place the seared roast into the slow cooker.

I cover and cook on LOW for about 8 hours until the beef becomes fork-tender.

I remove the cinnamon stick, mash the softened garlic into the broth, and stir everything together.

I shred the beef with two forks and transfer it to a bowl.

I heat a small amount of oil in a skillet over medium-low heat.

I dip each tortilla into the cooking broth, coating both sides.

I place the tortilla in the skillet and cook for 30–60 seconds.

I flip the tortilla, sprinkle cheese over the surface, and add shredded beef to one half.

I cook until the tortilla becomes crispy and golden, then fold it into a taco.

I repeat the process with the remaining tortillas.

I serve the tacos hot with fresh cilantro, lime wedges, and plenty of warm birria broth for dipping.
