Chili Peanut Coconut Chicken is one of my favorite dishes when I crave something rich, creamy, and packed with bold flavors. Tender pieces of chicken are simmered in a silky coconut peanut sauce infused with red curry paste, fresh ginger, garlic, and a touch of chili heat. The combination of savory, sweet, tangy, and spicy flavors makes every bite incredibly satisfying.

I love serving this comforting chicken dish over fluffy jasmine rice because the rice absorbs the delicious sauce perfectly. Best of all, I can prepare this Thai-inspired dinner in just 45 minutes, making it a wonderful choice for busy weeknights or relaxed family dinners.

Chili Peanut Coconut Chicken

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

For the Chicken:

2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

1 small onion, finely diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

1 teaspoon chili flakes

1 red bell pepper, sliced

For the Creamy Peanut Coconut Sauce:

1 can (13.5 ounces) coconut milk

½ cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon fresh lime juice

½ cup chicken broth

For Garnishing and Serving:

2 tablespoons chopped roasted peanuts

2 tablespoons chopped fresh cilantro

2 green onions, sliced

Cooked jasmine rice, for serving

Directions

Brown the Chicken:

I start by heating the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, I add the bite-sized chicken pieces and cook them until lightly browned on all sides.

I don't worry about cooking the chicken completely at this stage because it will finish cooking in the sauce. Once browned, I transfer the chicken to a plate and set it aside.

Sauté the Aromatics:

In the same skillet, I add the finely diced onion and sauté it for about 3 to 4 minutes, stirring occasionally, until softened and slightly translucent.

Next, I stir in the minced garlic and freshly grated ginger. I cook everything for another 30 seconds, just until the garlic and ginger release their wonderful aromas.

Add the Curry Paste and Chili:

I add the red curry paste and chili flakes directly to the skillet, stirring continuously for approximately 1 minute.

I find that briefly cooking the curry paste helps release its aromatic oils and deepens the flavor of the finished sauce.

Prepare the Peanut Coconut Sauce:

In a medium mixing bowl, I whisk together the coconut milk, creamy peanut butter, soy sauce, fish sauce, brown sugar, fresh lime juice, and chicken broth.

I continue whisking until the peanut butter is fully incorporated and the mixture becomes smooth.

Then, I pour the sauce into the skillet and stir gently to combine it with the fragrant onion and curry mixture.

Simmer the Chicken:

I return the browned chicken to the skillet, along with any juices collected on the plate. Next, I add the sliced red bell pepper and stir everything together.

I bring the sauce to a gentle simmer, reduce the heat to medium-low, and cover the skillet.

I let the chicken cook for 15 to 20 minutes, stirring occasionally, until the sauce thickens and the chicken is fully cooked. I make sure the chicken reaches an internal temperature of 165°F (74°C).

Adjust the Seasoning:

Once the chicken is tender and the sauce has thickened, I taste the dish and adjust the flavors.

If I want more saltiness, I add a small splash of soy sauce. For extra brightness, I squeeze in additional lime juice. When I prefer a spicier finish, I sprinkle in a few more chili flakes.

Garnish and Serve:

I spoon the Chili Peanut Coconut Chicken over freshly steamed jasmine rice.

To finish, I sprinkle chopped roasted peanuts, fresh cilantro, and sliced green onions over the top.

I love how the crunchy peanuts contrast with the creamy sauce, while the fresh herbs add color and brightness.

Servings and Timing

I find this recipe ideal for a family dinner because it makes four generous servings without requiring much preparation.

Variations

One of the things I enjoy most about this recipe is how easily I can adapt it to different tastes and ingredients.

Make It Spicier:

When I want a stronger chili kick, I increase the chili flakes or add a little chili garlic sauce. I can also garnish the finished dish with thinly sliced fresh red chilies.

Make It Milder:

For a gentler version, I reduce or omit the chili flakes and use a mild red curry paste. I still get plenty of flavor from the coconut milk, peanut butter, ginger, and garlic.

Add More Vegetables:

I sometimes add broccoli florets, sliced carrots, snap peas, or baby spinach. These vegetables bring extra color, texture, and freshness to the dish.

Use Chicken Breast:

If I don't have chicken thighs, I substitute boneless, skinless chicken breasts. I cut them into evenly sized pieces and monitor the cooking time carefully to prevent them from drying out.

Make a Vegetarian Version:

I can replace the chicken with firm tofu or chickpeas and use vegetable broth instead of chicken broth. I also replace the fish sauce with a vegetarian alternative.

Try Different Serving Options:

Although jasmine rice is my favorite accompaniment, I also enjoy serving this creamy peanut chicken with rice noodles, brown rice, or quinoa.

Storage/Reheating

I love making extra Chili Peanut Coconut Chicken because it stores well and makes a delicious lunch the following day.

Refrigerating:

I allow the chicken to cool slightly before transferring it to an airtight container. I refrigerate it within two hours of cooking and store it for up to 3 to 4 days.

I prefer keeping the rice in a separate container so that it doesn't absorb too much sauce during storage.

Freezing:

For longer storage, I place the cooled chicken and sauce in a freezer-safe airtight container.

I freeze it for up to 2 to 3 months for the best flavor and texture. When I'm ready to enjoy it again, I thaw it overnight in the refrigerator.

Reheating on the Stovetop:

I transfer the chicken and sauce to a skillet over medium-low heat. I add a small splash of chicken broth or coconut milk to loosen the sauce, then stir occasionally until everything is heated through to 165°F (74°C).

Reheating in the Microwave:

For a quick meal, I place a portion in a microwave-safe dish, cover it loosely, and heat it in short intervals, stirring between each interval until thoroughly hot.

I find that gentle reheating works best because the peanut coconut sauce can become too thick or separate when exposed to excessive heat.

FAQs

Can I use crunchy peanut butter instead of creamy peanut butter?

Yes, I can use crunchy peanut butter when I want additional texture in the sauce. However, I usually prefer creamy peanut butter because it creates a smoother consistency. If I use crunchy peanut butter, I still whisk it thoroughly with the coconut milk before adding it to the skillet.

Is Chili Peanut Coconut Chicken very spicy?

I consider this recipe moderately spicy, although the heat depends on the red curry paste and chili flakes I use. When I want a milder dish, I reduce the chili flakes. For extra heat, I increase them gradually until I reach my preferred spice level.

Can I make this recipe ahead of time?

Absolutely. I often prepare the chicken and sauce a day in advance because the flavors develop beautifully as they rest. I store the cooked dish in the refrigerator and gently reheat it before serving. I usually prepare fresh jasmine rice just before mealtime.

What can I serve with Chili Peanut Coconut Chicken?

I love serving this dish with steamed jasmine rice because it absorbs the rich peanut coconut sauce. I also enjoy pairing it with rice noodles, steamed broccoli, sautéed green beans, or a simple cucumber salad. When I want a lighter meal, I serve it with cauliflower rice.

How can I thicken or thin the peanut coconut sauce?

If my sauce is too thin, I remove the lid and let it simmer gently for a few extra minutes, stirring frequently. If it becomes too thick, I add a small amount of chicken broth or coconut milk until it reaches the consistency I want. I avoid boiling the sauce aggressively because I want it to remain smooth and creamy.

Conclusion

Chili Peanut Coconut Chicken is a recipe I love making whenever I want a comforting, flavorful dinner without spending hours in the kitchen. The tender chicken, creamy peanut coconut sauce, aromatic curry paste, and gentle chili heat come together to create a meal that feels special while remaining wonderfully simple to prepare.

I especially enjoy the contrast between the rich sauce, fluffy jasmine rice, crunchy roasted peanuts, and fresh herbs. Every ingredient contributes something delicious, making this dish a satisfying combination of textures and flavors.

Whether I'm preparing a quick weeknight dinner, cooking for family, or making meals ahead of time, I know this Chili Peanut Coconut Chicken will be a delicious and dependable choice. It's one of those recipes I happily return to whenever I'm craving something creamy, savory, and full of flavor.

Description

Tender chicken thighs simmered in a rich, creamy coconut peanut sauce with Thai red curry paste, fresh ginger, garlic, and chili. This flavorful Thai-inspired dinner is perfect served over fluffy jasmine rice with crunchy peanuts and fresh herbs.

Ingredients

2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

1 small onion, finely diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

1 teaspoon chili flakes

1 red bell pepper, sliced

1 can (13.5 ounces) coconut milk

½ cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon fresh lime juice

½ cup chicken broth

2 tablespoons chopped roasted peanuts

2 tablespoons chopped fresh cilantro

2 green onions, sliced

Cooked jasmine rice, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the bite-sized chicken thighs and cook until lightly browned on all sides. The chicken does not need to be fully cooked at this stage. Transfer to a plate and set aside.
  2. In the same skillet, add the diced onion and sauté for 3 to 4 minutes until softened and translucent. Stir in the minced garlic and grated ginger and cook for another 30 seconds until fragrant.
  3. Add the red curry paste and chili flakes to the skillet. Stir continuously for approximately 1 minute to release their aromatic flavors.
  4. In a medium mixing bowl, whisk together the coconut milk, creamy peanut butter, soy sauce, fish sauce, brown sugar, lime juice, and chicken broth until smooth and well combined.
  5. Pour the peanut coconut sauce into the skillet and stir gently to combine with the onion, garlic, ginger, and curry mixture.
  6. Return the browned chicken and any accumulated juices to the skillet. Add the sliced red bell pepper and stir to coat everything evenly in the sauce.
  7. Bring the mixture to a gentle simmer. Reduce the heat to medium-low, cover, and cook for 15 to 20 minutes, stirring occasionally, until the chicken is tender, the sauce has thickened, and the chicken reaches an internal temperature of 165°F (74°C).
  8. Taste the sauce and adjust the seasoning as desired. Add a splash of soy sauce for more saltiness, additional lime juice for brightness, or extra chili flakes for more heat.
  9. Spoon the Chili Peanut Coconut Chicken over freshly cooked jasmine rice. Garnish with chopped roasted peanuts, fresh cilantro, and sliced green onions. Serve warm.

Notes

Chicken thighs are recommended because they remain tender and juicy during simmering. Boneless, skinless chicken breasts can be substituted, but adjust the cooking time to prevent drying out.

For the richest and creamiest sauce, use full-fat coconut milk and creamy peanut butter.

For a spicier dish, increase the chili flakes, add chili garlic sauce, or garnish with thinly sliced fresh red chilies.

For a milder version, reduce or omit the chili flakes and choose a mild red curry paste.

Add broccoli florets, sliced carrots, snap peas, or baby spinach for extra vegetables and texture.

For a vegetarian variation, replace the chicken with firm tofu or chickpeas, use vegetable broth, and substitute the fish sauce with a vegetarian alternative.

Serve with jasmine rice, brown rice, rice noodles, quinoa, or cauliflower rice. Steamed broccoli, green beans, and cucumber salad also make excellent accompaniments.

If the sauce becomes too thick, stir in a little chicken broth or coconut milk. If it is too thin, simmer uncovered for several minutes until thickened.

For additional texture, crunchy peanut butter can replace creamy peanut butter.

Store cooled leftovers in an airtight container in the refrigerator for 3 to 4 days. Refrigerate within 2 hours of cooking and store rice separately.

Freeze the cooled chicken and sauce in a freezer-safe container for up to 2 to 3 months. Thaw overnight in the refrigerator before reheating.

Reheat gently in a skillet over medium-low heat with a splash of broth or coconut milk, or microwave in short intervals, stirring occasionally, until heated through to 165°F (74°C).

The dish can be prepared a day ahead. Its flavors develop as it rests in the sauce. Prepare fresh jasmine rice before serving.
