Bruschetta is one of my favorite Italian appetizers when I want something fresh, simple, and full of flavor. I make it with crisp slices of toasted bread topped with juicy ripe tomatoes, fragrant basil, fresh garlic, and extra virgin olive oil. The contrast between the crunchy bread and the fresh tomato topping makes every bite satisfying, while optional balsamic vinegar and Parmesan add an extra layer of flavor.

Baguette or rustic Italian bread, sliced

Ripe tomatoes, diced

Fresh basil leaves, chopped

Garlic cloves, minced

Extra virgin olive oil

Salt

Black pepper

Balsamic vinegar (optional)

Parmesan cheese, grated (optional)

Directions

I preheat my oven or grill to medium-high heat.

I slice the baguette or rustic Italian bread into individual pieces, then lightly brush each slice with extra virgin olive oil.

I arrange the bread on a baking sheet or place it directly on the grill. I toast it until the slices are golden, crisp, and lightly browned on both sides.

While the bread is toasting, I combine the diced ripe tomatoes, minced garlic, chopped fresh basil, salt, black pepper, and a drizzle of extra virgin olive oil in a bowl. If I want a little extra sweetness and acidity, I also add balsamic vinegar.

I gently mix the tomato topping so the ingredients are evenly combined without crushing the tomatoes.

I let the tomato mixture rest for about 5–10 minutes. I find that this short resting time allows the tomatoes, basil, garlic, and olive oil to develop a much fuller flavor.

Once the bread is crisp, I spoon the fresh tomato mixture generously over each toasted slice.

If I want a richer finish, I sprinkle grated Parmesan cheese over the top. I serve the bruschetta immediately while the bread is still crisp.

Variations

For mozzarella bruschetta, I add small pieces of fresh mozzarella to the tomato mixture or place a thin mozzarella slice on each piece of toast before adding the tomatoes.

For balsamic bruschetta, I drizzle a small amount of balsamic glaze over the finished appetizer. I like this variation when I want a sweeter, tangier flavor.

For avocado bruschetta, I gently fold diced avocado into the tomato mixture just before serving. I avoid mixing it too aggressively so the avocado keeps its shape.

For a spicier version, I add a pinch of crushed red pepper flakes to the tomato topping. The subtle heat works especially well with the garlic and olive oil.

For an extra-garlicky version, I cut a fresh garlic clove in half and rub it directly over the warm toasted bread before adding the tomato topping.

Storage/Reheating

I get the best results when I store the tomato topping and toasted bread separately. Once assembled, the tomato juices quickly soak into the bread and make it soft.

I keep leftover tomato topping in an airtight container in the refrigerator and use it within about 2 days for the freshest flavor and texture. I store plain toasted bread separately at room temperature in an airtight container for a short period.

When I want to serve leftovers, I re-crisp the bread in the oven for a few minutes until warm and crunchy. I don't recommend reheating the tomato mixture because I prefer the fresh flavor and texture of the tomatoes and basil. I simply spoon the chilled or room-temperature topping onto the warm toast immediately before serving.

FAQs

What kind of tomatoes do I use for bruschetta?

I prefer ripe, flavorful tomatoes with firm flesh. Roma tomatoes work particularly well because they're meaty and generally contain less excess liquid, but I can also use cherry, grape, or other ripe tomatoes. During tomato season, I usually choose whichever variety has the best flavor.

How do I keep bruschetta from getting soggy?

I make sure I toast the bread until it's properly crisp and wait until just before serving to add the tomato mixture. If my tomatoes are especially juicy, I drain some of the excess liquid before spooning them onto the bread.

Can I make bruschetta ahead of time?

I can prepare parts of the recipe ahead, but I don't assemble the bruschetta until I'm ready to serve it. I prepare the tomato mixture in advance and keep it refrigerated, then toast the bread separately. I assemble everything shortly before serving so the bread remains crunchy.

Is balsamic vinegar necessary for bruschetta?

No. I can leave out the balsamic vinegar and still make delicious bruschetta. Tomatoes, basil, garlic, olive oil, salt, and pepper provide plenty of classic flavor on their own. I use balsamic vinegar when I want a slightly sweeter and tangier topping.

What bread works best for bruschetta?

I like using a baguette or rustic Italian bread because both become crisp on the outside while maintaining enough structure to hold the tomato topping. I slice the bread thick enough that it doesn't become fragile after toasting.
