These Pistachio Frozen Yogurt Bites are creamy, lightly sweet, and full of nutty pistachio flavor. I like how the smooth yogurt base pairs with the silky white chocolate topping for an easy frozen snack or dessert.

Pistachio Frozen Yogurt Bites

Ingredients

1 cup Greek yogurt or coconut yogurt

⅓ cup dry roasted salted pistachios

3 to 4 tablespoons honey or maple syrup

1 scoop vanilla protein powder, optional

1 teaspoon vanilla extract

Pinch of sea salt

1 cup white chocolate chips

¼ cup canned full-fat coconut milk

Directions

I add the yogurt, pistachios, honey or maple syrup, protein powder if using, vanilla extract, and sea salt to a blender. I blend until the mixture is mostly smooth, leaving a few tiny pistachio pieces for texture.

I spoon the mixture into a silicone mold, filling each cavity about two-thirds full.

For the topping, I heat the coconut milk until hot but not boiling. I pour it over the white chocolate chips and let it sit for 5 minutes, then I stir until smooth.

I spoon the white chocolate mixture over each yogurt bite, filling the remaining space in the mold.

I freeze the bites for 3 to 4 hours, or until fully set. I remove them from the mold and store them in an airtight container in the freezer. I let them sit for a few minutes before eating for the creamiest texture.
