This Slow Cooker Teriyaki Beef and Broccoli is a super simple yet delicious dish that's perfect for busy weeknights. It combines tender beef with crispy broccoli, all coated in a savory, sweet teriyaki sauce. With minimal prep time and a slow cooker that does the work, this meal will quickly become one of my go-to family favorites.

Slow Cooker Teriyaki Beef and Broccoli

Ingredients

1 ½ pounds beef (such as flank steak or sirloin), thinly sliced

3 cups broccoli florets

½ cup soy sauce (or tamari for gluten-free)

¼ cup brown sugar

2 tablespoons rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon freshly grated ginger

1 teaspoon cornstarch (optional, for thickening)

2 tablespoons water

Sesame seeds for garnish (optional)

Green onions, sliced, for garnish (optional)

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

First, I place the sliced beef in the bottom of my slow cooker.

In a small bowl, I whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger until it's well combined.

I pour the sauce mixture over the beef in the slow cooker.

Then, I cover the slow cooker and cook the beef on low for about 4-5 hours, or until the beef is tender and fully cooked.

About 30 minutes before serving, I add the broccoli florets to the slow cooker, stirring them into the beef mixture. I cover and cook until the broccoli is tender.

If I prefer a thicker sauce, I mix the cornstarch with water in a small bowl and stir it into the slow cooker. I let it cook for an additional 10-15 minutes to thicken.

Finally, I serve the beef and broccoli over rice or noodles and garnish with sesame seeds and sliced green onions, if desired.

Servings and Timing

Servings: 4

Prep Time: 10 minutes

Cooking Time: 4-5 hours on low

Total Time: 4 hours 10 minutes

Variations

Gluten-Free: Use tamari instead of soy sauce for a gluten-free version of this dish.

Vegetarian: Replace the beef with tofu or tempeh for a plant-based twist.

Thick Sauce: If you prefer a thicker sauce, mix in more cornstarch or reduce the sauce by cooking it for longer before adding the broccoli.

Spicy: Add some red pepper flakes or sriracha for a spicy kick!

Storage/Reheating

Storage: I store any leftovers in an airtight container in the refrigerator for up to 3-4 days.

Reheating: To reheat, I warm it in the microwave or in a pot on the stove over low heat. If the sauce has thickened too much in the fridge, I add a little water or broth to bring it back to the desired consistency.

FAQs

Can I use a different cut of beef for this recipe?

Absolutely! Flank steak and sirloin are great options because they become tender when cooked slowly, but you can also try cuts like round steak or chuck roast.

Can I cook this recipe on high instead of low in the slow cooker?

Yes, if you want to speed up the process, you can cook it on high for about 2-3 hours. Just keep an eye on the beef to make sure it doesn't overcook.

Can I add more vegetables?

Definitely! You can add carrots, bell peppers, or even snap peas. Just make sure to add them in the last 30 minutes to keep them from getting too soft.

Can I make this dish ahead of time?

Yes! This recipe is perfect for meal prep. You can make it ahead of time and store it in the fridge for a few days. It also freezes well if you want to save some for later.

What can I serve this with?

I love serving this over steamed rice, jasmine rice, or noodles. You could also serve it with cauliflower rice for a lower-carb option.

Conclusion

This Slow Cooker Teriyaki Beef and Broccoli is everything I love in a meal—flavorful, easy, and satisfying. It's a one-pot dish that's perfect for a family dinner, meal prepping, or even entertaining. The slow cooker does all the heavy lifting, leaving me with a delicious, tender dish that’s bursting with flavor. I can’t wait to make this again and again!
