Classic Stovetop Burgers

I make these classic stovetop burgers when I want juicy, flavorful beef patties with perfectly crispy edges right from my kitchen. With a simple pan-searing method, I get restaurant-style burgers that are tender inside and beautifully caramelized outside in just 20 minutes.

Classic Stovetop Burgers

Ingredients

1 ½ pounds ground beef (80/20 blend recommended)

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

1 tablespoon vegetable oil (if needed)

4 burger buns

4 slices cheddar cheese (optional)

Pickles

Ketchup

Mustard

Directions

I divide the ground beef into 4 equal portions, about 6 ounces each. I gently shape each portion into a patty about ¾-inch thick and press a slight indentation into the center with my thumb to prevent puffing.

I season both sides of the patties evenly with salt and black pepper just before cooking.

I heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat for 3–5 minutes, until very hot. If my beef is lean, I lightly brush the pan with vegetable oil.

I place the patties in the hot skillet, leaving space between each one. I cook them without moving for 3–4 minutes, until a deep brown crust forms.

I flip the burgers once and cook another 3–4 minutes for medium doneness. I adjust the time depending on how I prefer them cooked.
