Golden, flaky hand pies filled with creamy cheesecake and juicy blueberries, these Air Fryer Blueberry Cheesecake Hand Pies are a deliciously simple treat that I can whip up in no time. With just a few ingredients and a quick cook time in the air fryer, I get all the flavor of a classic dessert with half the effort and mess.

Air Fryer Blueberry Cheesecake Hand Pies

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

1 package refrigerated pie crusts (2 crusts total)

4 oz cream cheese, softened

¼ cup powdered sugar

½ teaspoon vanilla extract

½ cup blueberry pie filling

1 egg, beaten (for egg wash)

Coarse sugar, for topping (optional)

Directions

I preheat my air fryer to 350°F (175°C) for about 5 minutes.

In a medium bowl, I mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

I roll out the pie crusts and use a 3-4 inch round cutter to cut out circles.

On half of the circles, I place about 1 teaspoon of the cheesecake mixture and 1 teaspoon of blueberry pie filling in the center.

I top each with another crust circle, then press the edges together with a fork to seal tightly.

I brush the tops with the beaten egg and, if I want extra crunch, sprinkle on some coarse sugar.

I place the pies in the air fryer basket in a single layer and air fry for 7-9 minutes, until they’re golden brown.

I remove them and let them cool slightly before digging in.

Servings and timing

This recipe makes 8 hand pies.

Variations

When I want to mix things up, I swap the blueberry pie filling for cherry, strawberry, or even apple. Sometimes I add a little lemon zest to the cream cheese mixture for a citrusy twist. If I'm in the mood for more indulgence, I drizzle the cooled hand pies with a simple glaze made from powdered sugar and milk.

Storage/Reheating

I store any leftovers in an airtight container in the refrigerator for up to 3 days. When I’m ready to enjoy them again, I reheat them in the air fryer at 325°F for about 3-4 minutes to bring back that crispy crust. I avoid microwaving them since it can make the crust soggy.

FAQs

How do I keep the filling from leaking out?

I make sure to seal the edges well using a fork and avoid overfilling each pie. A good seal is key to keeping everything inside.

Can I freeze these hand pies?

Yes, I freeze the unbaked hand pies on a baking sheet, then transfer them to a freezer bag. When I'm ready to cook, I air fry them straight from frozen, adding an extra 2-3 minutes to the cook time.

What kind of pie crust works best?

I use store-bought refrigerated pie crusts for convenience, but homemade pie crust works just as well if I have the time.

Can I make these hand pies ahead of time?

Absolutely. I assemble the pies ahead and keep them covered in the fridge for a few hours before air frying. That way, I can bake them fresh when I need them.

Do I need to flip the pies in the air fryer?

No, I don’t flip them. They brown evenly as long as they’re arranged in a single layer without overlapping.

Conclusion

These Air Fryer Blueberry Cheesecake Hand Pies are one of my favorite go-to desserts when I want something fast, easy, and incredibly satisfying. Whether I’m serving guests or just treating myself, I love how simple they are to make and how deliciously they turn out every time.
