These Philly Cheesesteak Sliders are soft, cheesy, buttery, and packed with tender steak, peppers, onions, and melted provolone. I like serving them for parties, game days, family dinners, or any time I want a warm, crowd-pleasing bite that feels easy but satisfying.

Philly Cheesesteak Sliders

Ingredients

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

1 tablespoon olive oil

1 pound thinly sliced steak meat, chopped

1 green pepper, thinly sliced

½ cup white onion, sliced

½ teaspoon fresh thyme, minced

½ teaspoon garlic powder

1 teaspoon salt

½ teaspoon ground pepper

1 tablespoon soy sauce

1 package Hawaiian rolls, 12 rolls

12 slices provolone or Swiss cheese

1 tablespoon butter, melted

½ teaspoon soy sauce

½ teaspoon brown sugar

1 tablespoon minced parsley

Directions

I heat the olive oil in a large pan over medium heat. I add the steak, green pepper, onion, and thyme, then cook everything until the steak is no longer pink.

I stir in the garlic powder, salt, pepper, and 1 tablespoon soy sauce. I cook it for 1 more minute, then remove it from the heat.

I preheat the oven to 350°F and lightly spray a baking dish with cooking spray.

I cut the Hawaiian rolls in half horizontally, keeping the rolls attached. I place the bottom half in the prepared baking dish.

I spoon the steak mixture evenly over the rolls, then layer all the cheese slices on top.

I place the top half of the rolls back over the cheese.

In a small bowl, I mix the melted butter, ½ teaspoon soy sauce, and brown sugar. I brush the mixture over the tops of the rolls and sprinkle with half the parsley.

I cover the dish with foil and bake for 20 minutes. Then I remove the foil and bake for 5 more minutes, until the tops are golden and the cheese is melted.

I remove the sliders from the oven, sprinkle with the remaining parsley, and serve them right away.

Variations

I sometimes use Swiss cheese instead of provolone for a slightly nuttier flavor. I also like adding mushrooms for a heartier filling, or using red and yellow peppers for more color. For extra richness, I can spread a thin layer of mayo or garlic butter on the rolls before adding the steak mixture.

Storage/Reheating

I store leftover sliders in an airtight container in the refrigerator for up to 3 days. To reheat, I place them in a 325°F oven until warmed through so the rolls stay soft and the cheese melts again. I can also microwave a single slider, but the bread will be softer.

FAQs

Can I make Philly Cheesesteak Sliders ahead of time?

Yes, I can cook the steak mixture ahead of time and store it in the refrigerator. When I am ready to bake, I assemble the sliders and bake them fresh.

What kind of steak works best?

I like using thinly sliced steak such as ribeye, sirloin, or shaved beef because it cooks quickly and stays tender.

Can I use a different cheese?

Yes, I can use provolone, Swiss, mozzarella, or even American cheese depending on the flavor I want.

How do I keep the sliders from getting soggy?

I avoid adding too much liquid from the pan to the rolls. I also bake them covered first, then uncovered at the end to help the tops turn golden.

Can I serve these as dinner?

Yes, I serve these sliders as a quick dinner with fries, salad, chips, or roasted vegetables.

Conclusion

These Philly Cheesesteak Sliders are warm, cheesy, and easy to share. I like how the tender steak, peppers, onions, melted cheese, and buttery rolls come together in one simple baked dish that works for parties, potlucks, or family meals.
